    If the wine list is a list and not a book (as some have grown to be), then it seems like it wouldn't be too much of a burden for restaurants to include brief descriptions and pairing suggestions for each wine. While that may be the job of the sommelier, a) not every restaurant has one and b) not every diner wants to engage with one. Both parties would be served by this: the restaurant sells more wine and diners have a more enjoyable experience.
